Ingredients

  • 4 oranges
  • 400 grams of special chocolate for celiacs
  • 500 ml of fresh cream
  • 500 ml of milk
  • 30 grams of sugar
  • 80 grams of refined corn flour
  • mint leaves
  • 6 egg whites
  • 4 spoons of icing sugar
  • 2 grated orange peel

Preparation

  • We start  by mixing the cream and milk  at a temperature of no more than 100°C.
  • Then,  in another pan, place the chocolate little by little and keep stirring until melted.
  • Then,  in a bowl, place the sugar and cornflour and mix  to unite them completely. Pour the milk and cream mixture over the sugared flour.
  • Once everything is well mixed,  place it in the pan with the chocolate and put it on low heat  (for 3 to 5 minutes) until it obtains a thick texture.
  • Peel the oranges and place 3 segments in each container where you will serve the candy.  Add the chocolate cream and let it cool.
  • Finally,  beat the egg whites and add the icing sugar and  the grated orange until you reach the point of snow. This meringue will be used to decorate the containers (use a pastry bag).
  • Decorate with mint leaves.  Your meringue will then be ready to eat!

Gluten-free banana and apple souffle

Ingredients

  • 3 ripe bananas (280 grs)
  • 380 g of green apples
  • 2 tsp vanilla
  • 60 grams of sugar
  • 1/2 teaspoon of cinnamon
  • 8 eggs
  • 80 grams of butter
  • 100 ml of brandy
  • Icing sugar and cinnamon (gluten free) for decoration

Preparation

  • Cut apples into small pieces  (remove the skin and seeds). Spread in a skillet with 40 grams of butter, until they are soft, then caramelize with 40 grams of sugar. Add the brandy and, as soon as the alcohol has evaporated, remove from heat. Grind the mixture and let it cool.
  • Perform the same procedure with bananas:  peel, cut, caramelize and mash well. Then add the applesauce and add the vanilla.
  • Separate the whites from the yolks.  The yolks you add to the puree and the whites should be beaten to the point of snow. Then put it all together.
  • Place the mixture in individual buttered containers.  Then place in a pre-heated oven at 180ºC and bake for 20 to 25 minutes.
  • Allow to cool and garnish  with cinnamon, icing sugar and banana or caramelized apple slices. In just a few minutes you can taste your delicious souffle!

Gluten free chocolate chip cookies

Ingredients

  • 15 grams of dark chocolate
  • 125 grams of butter or margarine
  • 225 grams of sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 250 g of flour (divided between 125 g of rice flour, 125 g of cassava starch)
  • 30 grams of cocoa powder
  • 1/2 teaspoon of baking powder

Preparation

  • Melt the chocolate  in a bain-marie, then add the butter and mix gently.
  • B until the sugar, eggs and vanilla extract  until a foamy texture. Then add the melted chocolate.
  • Sift the flour with the cocoa powder  and slowly add the mixture with the chocolate.
  • Place the mixture in the mold and  place in the preheated oven for 10 to 15 minutes. Your cookies will soon be ready to eat!
